Crock Pot Mashed Potatoes!

 

 

There are a few things that mankind will never know. Why do we sleep? How does gravity work, exactly? How do animals migrate? Luckily, the mystery of how to make creamy, dreamy crock pot mashed potatoes for your next get together that are incredibly easy but will appear to everyone else as if you’ve slaved for hours peeling and mashing will be solved right in your kitchen!

Mashed potatoes are traditionally a time consuming and labor intensive dish.  There’s peeling, there’s boiling, there’s draining and then mashing. The recipe you are about to read takes a whopping SEVEN minutes to make.  You read that right.  In just seven minutes you can compile all the ingredients, throw them in the crock pot and be done!  What is this black magic, you ask?  Let me shed some light on this culinary revelation right now!

All you need for this spud-tacular fare is the following:

2 pounds of red potatoes cut into 2 inch pieces (to peel or not to peel?  That is all up to you!)

½ cup sour cream (or Greek yogurt if you want to health it up)

¼ cup milk

2 teaspoons minced garlic

2teaspoons salt

1 teaspoon black pepper

Next, spray the inside of the slow cooker with cooking spray.  Add the chopped potatoes and then cover and cook on low for 5-6 hours or on high for 2 to 3 hours. Then, add the rest of the ingredients and use a hand mixer to blend them together. Give them a taste and add any more spices as desired.  You can serve them plan or with toppings such as gravy, cheese, bacon…the possibilities are endless!

A few notes about this recipe.  One, you can easily double this for large groups.  Just increase the cooking time by 1 to 2 hours.  Also, the potatoes can be smashed instead of mashed.  What is the difference, you ask? Smashing will give you a lumpier texture while mixing will make them smoother, not to mention it’s faster.  But hey, it’s your spud show so do as you please!  The results are guaranteed to beguile at your next banquet.
