Taco Tuesdays can get a little old, so add a little taco flair to your Tuesday night tradition with mini taco bowl Tuesday. Diminutive yet packed with flavor, these delightful deep dishes are fun and best of all the bowl is edible, so no dishes!
All you need is:
8 6-inch flour tortillas
1 pound ground beef of your choice (you can also use chicken, about 2 cups)
1 cup of thick and chunky salsa
½ cup shredded cheddar cheese
2 cups chopped lettuce
1 tomato, chopped
¼ cup ranch dressing (or sour cream, whatever floats your taco boat)
First, heat your oven to 350 degrees. Throw those tempting tortillas in the microwave for 30 seconds to help make them pliable, and then line each of 8 muffin cups with 1 tortilla. Fold back the edges of the tortilla, leaving a bowl-like opening in the center to hold all of those flavorsome fillings.
Next, bake the tortillas in the oven for 10 minutes. While they’re cooking, brown the meat in a large skillet and then drain. Stir in salsa and bring to a boil. Simmer the meat and salsa mixture on medium-low for 10 minutes.
Finally, you’re ready for your fiesta! Spoon the meat into the tortilla bowls and top with the remaining ingredients to your heart’s (and stomach’s) content. Ole!
