Peppermint Bark Cheesecake

Peppermint Cheesecake

Peppermint is the ultimate holiday ingredient.  Candy canes adorn Santa’s workshop and the trees of every family.  It’s fun this time of year to add a little holiday charm to classic desserts, and peppermint cheesecake is just the dessert to do it with!  Creamy, minty, chocolaty – it covers all the bases!

All you need is:
18 vanilla crème-filled chocolate sandwich cookies, finely crushed (about 1 ½ cups)

3 tablespoons butter

30 starlight mints, divided

4 packages (8 ounces each) cream cheese, softened

1 cup sugar

4 eggs

1 package (4 oz.) white baker’s chocolate, melted

¼ teaspoon peppermint extract

1 package (4 oz.) semi sweet baker’s chocolate, divided

2 cups thawed whipped topping

 

Begin by preheating the oven to 325 degrees.

Now, mix the cookies crumbs and butter until blended and press onto the bottom of a 9-inch springform pan.  Bake for 10 minutes.

While the crust is baking, crush 25 of the mints.  This is easily accomplished and perhaps very therapeutically done by placing them in a large zip top plastic bag and rolling over them with a rolling pin, or crushing with a mallet.

Next, beat the cream cheese and sugar in a large bowl with a mixer until blended.  Add the eggs, one at a time, mixing on low speed after each is added until just blended.  Then, add the melted white chocolate, crushed mints and peppermint extract and mix until just blended. Chop half of the semi-sweet chocolate and stir into the batter.  Once the crust has baked, take it out of the oven and then pour the mixture over the crust.

Bake for 55 minutes to 1 hour or until the center of the cheesecake is almost set.  After you remove it from the oven, run a knife around the rim of the pan to loosen the cake.  Cool completely before removing the rim.  Refrigerate for 4 hours.

As the cheesecake is cooling in the fridge, crush the remaining mints (more baking therapy!) and chop up the remaining semi-sweet chocolate.  Before serving, spread one cup of whipped topping on top of the cheesecake and sprinkle the remaining crushed mints and chopped chocolate over the center.  Now do your part to spread creamy peppermint joy and cheer throughout the land by serving this at your next holiday get together!
